Trying a Genesse Cream Ale that has extra hops. I always like the old cream ale and seen this today and thought I’d try it. It’s good.

Haven't had one of those, will have to try it. I'm drinking a Honey Rye Cream Lager, love the cream ale/lager.

Huh, the regular kind was a staple back in the old times. I will have to look for that.

I'm drinking some of the old school Burton Ale (which is really the predecessor to what became English IPAs they shipped over seas later) that I made where I brewed it extra strong OG maxing out the capacity of my mash & boil, and then split between 3 fermenters and diluted it with a couple extra gallons of treated water before fermentation to end up with 8 full gallons of beer. It has 8oz of EKG in it, a full 6oz of them as initial bittering, 2oz more at 20 minutes, because that's how you do an old school one of these. All the hops in the boil give it a pithy bitterness, and the late hops combined with them make the beer taste like bitter citrus marmalade on toast, and some light pleasant aroma does still remain because of the sheer quantity of them. And it came out perfect. It's really damn good. I'm glad I have a hella lot of it.

I might do it again with a different variety of English hops.

Actually, I've noticed Simcoe 'losing it' for about 2 years or so. I used to make lots of beers with Simcoe and even though I still like it a lot, I thought it was just me using it so much or just a so-so batch of hops.
I did recently make a Simcoe and Amarillo beer and used Cryo Simcoe which I thought was very good.

Try some Apollo hops sometime if you want pine and dope. It is all about pine and dope. It has less citrus, so you would want to add a citrusy hop if you want that. But if you like pine and dope it's a good single hop too. It is especially good in a slightly more malty grain bill (IE not West coast style, but more Midwest style or Eastern style).

A tester of that Oktoberfest beer I made with the Kolsch yeast, it's already really damn good, and is only going to get better with age.

Damn Dave now you just irritated me, :) That looks so good and I got another week or so to test mine. Nice color and carb there. I am trying to be patient and wait.
