Version 10 of my Irish Red:
2 cans BRA (last of my old Mr Beer extracts)
1 lb light DME
.25 lb Carapils and .25 lb 20L steeped
1 cup dark brown sugar
.25 oz Amarillo 30 min
.25 oz Cascade 15 min
.25 East Kent Goldings 7 min
will dry hop with Armarillo
S-04 yeast

This is one of my favorites. Has Irish Red malt profile with a bit more hoppiness. Usually comes out to about 7.2% ABV.

Finishing hop boil as I type this.

Nothing to bottle this weekend, but I'm racking the fiver of FedoraDave's American Ale to a secondary today, and brewing an extract/steeping grain recipe I came up with off the top of my head. It's a 2.5 gallon batch.

2.5 pounds Light DME
1 pound Amber DME
4 oz. Carapils
4 oz. flaked rye

1/4 oz. Warrior @60 minutes
1/4 oz. Centennial @60 minutes
1/4 oz. Centennial @ 20 minutes
1/4 oz. Warrior @7 minutes
1/4 oz. Centennial @ 7 minutes

Will dry hop 1/4 oz. each of Centennial and Warrior

Never used Warrior before, so I'm interested to see what I get. I sniffed it at the LHBS, though, and I think it'll work well with the Centennial.

Because of the hops strains I'm using, I call this beer "100 Years War IPA".

First attempt at DME and partial grain yesterday 4 Gallon Batch:

3 lbs Amber DME
1.5 lbs Light DME
1.5 Crystal 40L
1 lb Flaked Wheat LHBS was out of Flaked Barley
.75 Roasted Barley

1oz Kent Goldings @ 40
1oz Target @ 20
1 Safeale04

Brewed up yesterday;

Honey Malt steeped 20 mins
1bs of light DME
.25 ozs First Gold 20 mins
.25 Ozs First Gold 7 mins
1 can Patriot Lager flame out
4 Ozs maltodextrin

7 days before bottling will add Blueberries.

Brewed a batch of "Twisted Monk Witbier"

4oz Carmel Wheat -German
2oz Breiss 10LV Crystal (2 row) Domestic
2oz M&F Cara Pils (2row) British
steep for 30min

.5oz Mt. Hood Hops for 10min
2 cans BD Twisted Monk Witbier HME at flameout

for a 2 gallon batch

Smelled amazing! Wheat with citrus and pine. Hope this one turns out as good as it should be.

Just got done bottling 5 gals. of Nut Brown Ale. Going to brew tomorrow.

Must obey the hat! Dave, I will definatly follow up. Overall I think I did okay, I missed the OG calculated on QBrew by .004. QBrew had it at 1.060, it went into the fermenter at 1.056.

0.004 is nothing to worry about. That could be a result of the temperature of the wort when you took the sample. And it won't affect the taste or quality of the beer at all. Sounds like a winner!

Just finished up a 5'er of my Irish Red. Had 3 friends over to watch my AG process. One just started with a Brewers Best kit last week, one has been doing MB for a few years and just did a Brooklyn Brewing kit, and the other we are trying to get sucked into the obsession. Everything went great, and we may get a few more Borg assimilites out of the day...

Bottled this one (Apocalypto 5) 4 weeks ago. Drinking now. :woot:
In the big mouth bubbler I have "Spawntanica IPA" based on a session IPA recipe called Nazz from Zymurgy Magazine. Label is in the art dept.
This recipe uses 2 Row, Marris Otter, Carapils, Dextrose malts, with Warrior, Falconer's Flight, FF 7 C's hops & WLP001 Yeast. It's going to be a killer! :flag:
