Guess we should've used more lemon peel. I'll be dry hopping Sun. and bottling next Thurs. I'll let you know if I can taste any lemon in mine. However my efficiencies were so much higher than I expected I probably won't get as much lemon flavor as you did. It'll be lost in the malt I suspect.

Borg; I have never dry hopped, since it is maltier than was anticipated. Should I increase the amount I use in my dry hop? Or, since it mostly for aroma, no change? (personally I lean toward the latter)

If you have ever had Brooklyn Brewery "A Sorachi Ace" saison - the lemon vibe you get in that - including the flavor - is primarily from a somewhat large dry hop of the stuff I'm pretty sure. At least the equivalent of 3-4oz of the stuff I think in a 5 gallon batch. Maybe even more.

It is not true that you get NO flavor from a dry hop - it's a different and more subtle flavor then if you boil, but it is not "NO". And regardless, aroma and flavor are not something you can totally separate either, yes you taste with your taste buds, but aroma compounds from everything that goes into your mouth gets up into your olfactory nerves too, and that changes the way you perceive the taste.

With Sorachi I find that any that is boiled for more then just a few minutes has a more creamy lemon vibe, where any that is dry hopped or added as a flameout/hop stand has a more "lemon grass" vibe. Also the more malty/sweet the beer the more "creamy" it will seem.

The "A Sorachi" stuff is bone dry and not malty at all, so it lets the hops and saison yeast really shine. So YMMV, and you may want to just leave it alone this time, and next time try to brew a "nothing but pils/wheat" Saison with a bunch of late Sorachi and see what you think.

Just finished bottling. It smelled great but I didn't smell any lemon. Probably should've used a lot more lemon peel and a little more Sorachi Ace, but who knew? Just FYI I got a 8.3% abv

Here it is. Aroma is very nice. A little fruity and a little spicy. The pour is actually a touch clearer than the pic shows as there is quite a lot of condensation on the glass. And the color is more yellow than the pic shows too. The flavor is nice; dry and tart. There is just a very light hint of the lemon. Not as much as I was shooting for, but no matter, it came out tasty. And at 7.9% ABV, it's extremely easy drinking. We did a good job on this Jim. :banana: :banana:

Tried one of mine last night and am trying your now Chris. FWIW they seem to be close to the same but I think I get a little more lemon in yours. You were right this is a good recipe just need to tweak the lemon peel and possibly a couple more grams of sorachi ace. I'll have to be careful that 15.1 alpha will make it real easy to over hop.

WOW, this Saison is Sofa King fantastic, that it's going in BeerSmith!!!!!!!!!! Thank You for the beer mail Chris. Though it's lacking in the aroma department, but what does a Saison smell like? It screams DuPont on the tongue. The carb level is fizzy and fantastic for a Saison. This recipe is competition winning worthy, great job you two. :clink: Sh*t, now my glass is empty. :(
