Just got the last LBK bottled. This was the rice Cream Ale. The sample tasted really good. I liked it a little better than the one I did with corn. I do need to do one with corn AND rice. Anyway, got some in the pipe for August.

Well I got chance to brew today. Yay! So I did a Steam Beer, some pilsner malt and Munich wheat yeast. Can't wait to try it out, about 4.2% projected, the wort is cooling so I don't have a starting gravity yet, but that is Beersmith's guess, and it is usually pretty accurate now that I have my process dialed in. I'll update this in a few with the actual numbers. So this is Steam Ale 8 for those who are staying up nights wondering what I'll name my next beer.
Monty
[EDIT]Hmm.. The OG came out right at 1.050. How the heck did I miss it so much. BS was calling for 1.043. It will still be a potentially 5% beer, but I measured everything exactly. Hmm..
[Edit Edit] not a steam beer, but a damptbier, German for steam Beer, and there is a difference - as per Mashanencyclopedia

RIP RW
Today I got to try my rice cream ale. This was a partial mash of 1 lb flaked rice, some 6-row and some amylase with Cascade hops and Windsor Ale yeast. It was good, interesting and I bet I've never had it before. I love home brew.
Oh and I also slipped in a nice high power football beer, a simple Ale with Nugget hops and BRY-97 yeast. estimated 7.2% ( and I was shooting for 5) 1.066, Jeez, what am I doing wrong. Not water volume, or weight of dme. Come to think of it, thats something to check out, is the scale accurate. Hm... BS projected 1.050, and I got 1.066. Not water volume as this was double checked as was the control this time. Weighs also were scrutinized carefully.

Ok I've had a chance to make a couple more batches. The first is a simple saison (Belle Saison yeast) with 2 lbs of Light Golden DME, 4 0z honey, + Belma hops, and the second is a Belgian with 2 lbs dme, 4 oz honey, amarillo hops, and Safale Abbeye Yeast. Should be interesting. I guess I am going through a phase here of using 2 lbs of light golden DME, 4 oz honey, and then a yeast and a hop of my choosing. I am trying to make 4% beer with different yeasts, and of course, all with fancy names like blonde ale 10 and blonde ale 11.

Monty,
Let us know how you like the SafAle Abbaye yeast.
Haven't seen it here yet but my LHBS is anticipating the Lallemond version in a few weeks.

Update:
Ended up mentioning the SafBrew Abbaye to my LHBS while asking them to order the Lallemand product.
Got a call from them yesterday telling me they had the SafBrew one.
Picked two up today... Now that's why I like dealing with the local folks!
Think I'll throw a quick Dubbel together with it this week!
Of course, I'll be getting the Lallemand product as well!

Ok, this came up this week, so I had a first pour last night. Yummy!. Just a simple gold extract/malto-dextrine recipe but this Abaye is my new favorite yeast. Actually it was kind of cool as my Saison also came up (Belle Saison) this week, so its been a belgian / saison beer week. Both came out very nice. The Saison came out smoother and more like a duPont I think because I did it at normal Ale temps. (64F)
Anyway I can recommend the Abbaye from Fermentis.

There you are Monty, hadn't seen you posting of late ('course I haven't been on much either).
So are you still doing the Cream Ale thing?
My brew stuff is packed but I got this cream ale idea stuck in my head so I immediately thought of you.
How about "Dreamsickle" a cream ale flavored with dark cherries and tangerine, just in time for Christmas.
Get right on it!!!!

Lol yes I am still here. That does sound good. How about a blonde with frozen concentrate juices. Like orange and cherry. That's more my speed. Edit: ciser?

Ok did a mb classic American light but added a can of orange concentrate and a can of white grape concentrate and finished it off with Belle saison. It should be interesting.

Well I thought I had Cherry concentrate, but it was Apple, so the dreamsicle became a apple and cream ale. 1 lb Pilsner DME, 2 can Frozen apple concentrate, 1 oz Hersbercker, and 1 oz Hallertau both for 10 minutes for like 15 ibu. apple juice was of course after boil. And Notingham to keep it simple. BS says like 4-4.5 which I am learning is how I like my beer.
Too. Old.
Monty
[EDIT] this also had a PM with 3/4 lb 6-row, 1/2 lb flaked rice, 1/2 lb flaked corn, 1/4 lb Honey Malt I did it the night before so forgot all about it. Too. Old.

I think you made an unintentional Graff (cider beer hybrid) there Monty. See you are branching out in styles
