I wonder if the "something" your getting are esters coming from the lager yeast? So are you happy with the overall results?

I think it is esters, but not overpowering, predominating is the cluster...I really think it's a good example of the style, and I like it. Turns out third time is a charm. I'm going to let 'em finish the full 4 week conditioning. Then set some in the fridge to cold condition till the 4th of July cook out.(pull 'em out and share 'em around while the charcoal is getting hot)

considering how the last 3 have gone I think we need to start researching styles so we have suggestions for the next RCE(at this point I'll be honestly surprised if we aren't paired :lol: )

Here's my first pour. It's only been in the bottle two weeks and about 36 hours in the fridge, so I'm a little early. But I couldn't wait any longer. Jim, I think we've done it again. I like this beer. It's just a regular old beer. Kind of like a BMC, only with some grain and hop flavor to it. Perfect summer drinker. It's a little hazy, but I'm sure after it lagers for a few weeks in the fridge, this will end up pouring really clear.

FWIW, Mine were pouring clear in 4 weeks. So no heavy esters from warm fermenting with 34/70?

Did you use only 34/70? I used 1 pack of 34/70 and 1 pack of S-05 in mine. I'm not getting any fruity esters at all in mine.

No, I used S-23 and S-33 and didn't lager. Makes a nice little ale. I think we've made, at the least, a right fair attempt at the style. I plan on making this a 2.5g recipe so I can keep a supply on hand(I got coolers that ain't doin' nothin')

Duh....when you wrote "So no heavy esters from warm fermenting with 34/70?" I did not read that as I question. I read it as a statemet that you didn't get any esters from the 34/70. Sorry about that.

I really haven't started to lager mine yet as it still needs a few more days to carb up, so I think it should really be good in a few weeks. I think this one might make it into the summer beer rotation.

I think you're right that is a real nice attempt at the style. And you've titled it well because....Three's A Charm my friend!!!

I'm asking b/c I'm going to be doing a Steam Beer this week, and was considering using 34/70. 'Cause I ain't going to order the Cali lager yeast.

I think you should be good to go then. I kept the fermentation temps in the low 60's the entire time. According to Fermentis, the temp range for 34/70 is 46.2 - 71.6 (ideally 53.6 - 59). So even in the low 60's your well in it's temp range.

Mine was brewed with both S-05 and W-34/70 and controlled to 65 degrees during fermentation.
