Beer quotes/sayings thread!

I just found an awesome poem by Edgar Allen Poe about beer, and I know there are tons of other good sayings out there. We need a thread to consolidate the wisom of the ages.

It doesn't have to be from a famous person, if your crazy uncle has a good saying about drinkin, it qualifies here.
