Thunkin 'bout

Doing this up to use up some of my Sparkling Amber DME and extra hops. Whadya'llthunk? Any/all suggestions before I commit?

American Amber Ale Session Brewski
2.50 gal LBC

0.25 lb CaraPils Steeped
3.00 lb Sparkling Amber DME

0.50 oz Columbus 30 min
0.25 oz Columbus 7 min
0.25 oz Columbus 0 min

Should add I have 2 large vials of washed US-05 and 1 large vial of S-04. Also have a pack of dry notty. Best choice? I'm thunkin of using up one of the US-05 vials.

which of the yeasts is oldest? if you've had the washed s-04 or us-05 for a long time, i would probably use that because the longer washed yeast sits, the less viable it becomes.

recipe looks good!

-05 is about a week older than S-04. They are both bout 2 months old so I will give a quick wash again and pitch the slurry left on top. These vials are large glass spice (picked them up new) bottles, all bout 1/2 full. There should be ample viable sleep'n yeasties somewhere in those.

Good or bad, the wort is chill'n in zome cold wata. Sure smells good.

Well, all is well. It's in the LBC. Missed my target per qBrew of 1.056, came in at 1.050. Not sure why, everything went as planned, amount right on the nose. Oh-well, I'm not gonna cry over .006, it will still be an amber, just slightly more towards the hoppy side but not much. I was hoping for a more balanced session brew but it is real close, I do like them a little bitter. This should be ready for the Christmas holiday, I'm going to force carb it.

Probably a water volume issue. Like the LBK, I'm sure the LBC being mass produced doesn't always have accurate measurements stamped on it.

I was thinking the exact same thing; it has to be a volume measurement somewhere with just DME and carapils.

I would suggest checking your measuring vessels and if they are okay use them to check your LBC.

If they are a bit to hoppy you could always let them sit longer than you planned and see if they mellow out.

I think this looks like a great amber ale, Froze. Specific gravity be damned. I doubt it'll be too bitter.

I predict a smooth, session beer that'll go down great this winter.

Dat's what I'm a thunkin. Nice winter session. I don't like all my winter beers bitter/strong, etc. Got me eyes crossed.

Finally got around to trying this. It has been stored in a 2.5 gallon keg for a while, put it in the fridge tues., tried it today.

I'm surprised, it's pretty darn good! Balanced, not malty or hoppy. Came out to 4.5%, I think it's gonna be a good late winter/early summer brewski. Can't smell any hops, has a real light malty smell. I think it will be a good session brew. For some reason it is carb'd pretty light, I'd say around 1.5. I may up the pressure to 12 psi in the fridge and let it sit a few days then try again. Either way, it's a fairly good light beer. Head and lacing is not great, but it's there.
