Biere De Saison question

Hello All,

Tried this Mr. Beer Summer Seasonal today for the first time.

was in the LBK 3 weeks and conditioning in the bottle for approx 6 weeks.

poured clear with a great foam head.

My question is I have never had one of this style of ale and am wondering if the slightly sour bite to it (if that is accurate) is normal for this style of beer. I could almost say lemony fruity also instead of sour.

beer was quite tasty, but I didn't know if it was a slight infection of sorts, or just the style.

anyone else have tried this style and can describe for me, it would be appreciated.

Mike

From what I have read, it is suppose to be a bit sour but also refreshing....sounds like you hit it on the nose.

Bella Saison and Wyeast French Saison both ferment out to a very dry tart tasting beer. That is completely normal.

It should be like tart citrus was added, not like sour vinegar was added.

As long as it seems like that, everything is as it should be.

I did a 1 gallon northern brewer saison kit. I used belle saison yeast... no additions beyond the 2 oz honey they packaged. I fermented at 76-78F the entire 2.5 weeks then let it sit at 68f for a couple days before bottling... aged 3 weeks. to keep the temp up I put the fermenter in a cooler full of water up to the level of the wort and used an aquarium heater.

color: very light yellow
yeast refused to floc out completely and were extremely silty. the slightest jarring of the bottle sent up a storm of yeast.
taste: like a wheat beer.. tart... a slight green apple/purple plum kind of tart. also had a slight clovey and flowery taste.. mixed with a yeasty 'funk' hint that I couldn't put a better label to. there was also a slight smokey quality to the taste
smell: yeasty/smokey/flowery

served chilled... good carbonation.. tons of tiny fizzy bubbles.

it was my first saison and for a kit so simple I found it totally fascinating.
