I gotta try again....

Last winter's RCE saw me partnering with FrozenInTime and Beer-lord on three variations on a theme. We took a standard stout recipe, and each made modifications on it. I think Beer-lord did an oatmeal addition, Froze did a cherry addition, and I did a milk stout, with vanilla beans added.
Unfortunately, this was one of those gusher batches I've been plagued with, and I just haven't gotten around to dumping the surplus yet. But I did open a bottle (another gusher) this weekend to add 1/4 cup of it to a beef stew I was making in the slow-cooker. I drank the rest of it. And it made me think:
This particular infection (if that's what it was) doesn't affect the taste of the beer; only the radical fizzing qualities of even a stout. The beer tastes fine. And the vanilla milk stout is particularly good, IMO.
So I'm going to revisit this recipe and brew another 2.5 gallon batch of 'NillaMilk Stout. I'm not even a big fan of stouts, but this one has a lot of nice things going for it.

Get back on that horse. I have to say, mine wasn't so good but it was ok. Frozen's was pretty good! I know you're not a stout guy but make the style you like to drink.
It was fun though.

Glad your gonna give 'er another shot! I had a batch of Rye that did the same thing. Once the spludge was over, what was left tasted pretty darn good. Never figured out what happend as only about half did it, the rest were fine.

hey, it's worth a second chance if it tasted good! and now that you've eliminated the possible problem LBK, it should turn out without fizzing over! best of luck on round 2

You know, to be fair, I base my antipathy toward stouts on my reaction to Guinness. It just seems really thick and almost chalky-tasting to me. But I've had other stouts (particularly Left-Handed Milk Stout) that I've really liked. So maybe it's just Guinness that I don't like. As I said, the 'NillaMilk Stout is something I actually like quite a bit. So I'm actually pretty eager to brew another batch. Stouts will probably never be my beer of choice. But it's not as if I hate them.

Dave - when was the last time you tried Guinness? I used to think it was "thick and bitter" before I started drinking craft beer, and now I think it's "thin and watery"
I do like the creamy texture though, as long as it's served properly. Not my favorite beer, but a nice session stout at only 4%/abv.
Maybe you should give it another try!

I had it at Logan Airport a few weeks back, and "thin and watery" is exactly my impression. And "foamy" with their patented bubbles. Wouldn't get it again.

Had it for the first time this past weekend other than at the renaissance festival with a turkey leg.
Exact same impression, I am one for thick beers, the kind that don't splash when they pour, guinness is not that. It was not bad, dryer than I like as well.

You're right, I should try Guinness again, now that I've gained a whole new perspective via homebrew and craft brew.
