Wheat and pilsner mods

Hey guys. I'm thinking of doing a wheat or a pilsner next. Thinking of using Brewdemon's "TWISTED MONK WITBIER " and "ONE EVIL PILSNER RECIPE" as base extract kits (not together.) Was wondering if any one had any suggestions for hop additions and steeping grains. As both are kits using HME already, I didn't want to overpower either with too many hops.

For the Wheat, I was thinking of using .5oz of Mt. hood for 10 minutes as a flavour addition. Not sure what grains to use for a steep on a wheat beer. I've been using a combo of carapils and crystal 40.

For the Pilsner, I was going to add .5oz of saaz or tettanger for 10 minutes as a flavour addition. Again, I'm assuming carapils would be fine for this as a steep as I don't want it to be too dark.

Thanks for any advice

(also) yeast suggestions for either to step it up from the standard brewdemon yeast.

The twisted monk is like the old witty monk. Just some carapils + 1/2# of extra light dme + 1/2oz of saaz @10 or @20 was really good in that beer. I would not put any sweet crystal malt in it personally. Any clean ale yeast is fine if you want blue moon like beer.

The pilsner is not "normal" in that it has nelson sauvin in it. Saaz is fine, but honestly I'd put even more nelson sauvin in it if I made it again. Because I like those hops a lot. I'd also not put any sweet crystal malt in it personally.

+1! Witty Monk (slightly modified) was my favorite old MB/new BD brew. I actually doubled the Witty Monk HME, steeped 1/2lb carapils, added 1lb light DME and 1/4lb Saaz at 60 minutes. Agree with mashani to leave out any crystal and use a clean ale yeast like US-05.
Fermenting: Bucket 1 - Fresh Squeezed IPA; Bucket 2 - Empty

Kegged: Keg 1 - Irish Red; Keg 2 - Cream Ale; Keg 3 - Amber Ale; Keg 4 - APA; Keg 5 - Empty; Keg 6 - Empty; Keg 7 - Empty

Thanks for the response guys. All dully noted.

On a side note mashini, I notice that your new avatar has a tobacco pipe. I just (as in the last week) got my first pipe as an experiment in the manly arts. Do you really smoke a pipe, or just like a distinguished avatar? Pipe smoking might make a good thread in the brewhouse?

JimH has a recipe he calls Murican Wheat that uses a small bit of Mt. Hood for bittering @ 30 mins and then uses Falconer's Flight @ 15 and 5 for flavor and aroma, and it yields a very nice mango note, with mild and smooth bitterness. It also uses a medium crystal (40L) to enhance the color to a golden amber, but not too much that it will oversweeten the beer. Just tossing the idea out there if a fruity wheat beer is something you're interested in concocting.

Honey Malt makes for a great steep in a wheat beer.

Hahahaha. No, I don't smoke, it's more or less incompatible with competitive endurance athletic stuff (run/bike/swim/cross country ski) when you are pushing VO2 max.

I just changed it to this as part of the change your avatar game in response to someone else changing their avatar to a pipe smoking one. Wasn't sure if anyone would get it, or if they did even admit they got it LOL.
