Bavarian Weissbier Mod.

So I have a can of Mr Beer's Bavarian Weissbier HME and Im looking to modify it a bit. What are your guys's thoughts on this recipe. (Keep in mind this is a 2.5 gallon recipe)

-Boiling 1 to 1.5 Gallons of water. Steeping .25 lbs Carapils (or open to other grain suggestions) for 30 mins.

-Add 1 to 3 lbs of either Bavarian Wheat DME or 1 to 3 lbs. Golden Light DME (Not sure of which one to go with and how much DME to add )

- Boil for 30- 60 mins?? Adding .25 oz of Spalter Hops for 15 mins and .25 oz of Pearle Hops for 15 mins (for flavor and aroma instead of bittering due to the Hopped Malt Extract),

-Take off heat and add the Bavarian Weissbier HME.

-add to LBK, top with Cold water and underpitch White Labs 300 Yeast instead of the pack of yeast that comes under the lid.

I am looking to try and get banana flavors in this batch similar to a Franziskaner Weissbier.

you need to keep it fermenting in the low 70's for the banana to come thru

Yea, ive read low to mid 70s and under pitching the yeast and about half the oxygenation also helps w/ the banana (ester flavors)

I did a bavarian recipe where I added perle hops and cracked coriander. It was delicious.
