Well I am looking to increase my line up. I have the IPA recipe set, so I am looking into another recipe since I have Two Empty LBKs.

Im think of this;

4ozs. Honey Malt steep
4 Ozs Cystal steep
1 lbs light DME
.25 First Gold 18 mins
.25 First Gold 7 mins
1 can Patriot - HME flame out
1 lbs of blueberries purée 7 days before bottling

sounds pretty good to me.

Honey malt should really be mashed. Do you have some amalyse enzyme, or maybe some 6-row or 2-row? If so up the temp to 150 and let it sit for an hour. You may get something from steeping it, but I've never done that. Always mashed it w/enzyme or 6-row.

I've steeped honey malt several times, with other grains, and some honey flavor does come through, which was my goal.

I have steeped it before with my wheat brew some sweetness came through nicely.

You can steep it like everyone said, it's ok. You will get nice flavor out of it.

Also, to mash it on it's own, you don't actually *need* 2-row. Honey malt is like Munich in that it can self convert - but just barely. You just can't mash it with other adjunct grains that don't have enzymes without 2-row. I've done honey malt PM's in the past.

Even in a steep you will get some partial conversion depending on your steep temps.

Changed up a little. Just going with the Honey Malt, no Cystal. Also adding 4 Ozs of maltodextrin.

BeerRust I'm not familiar with the Patriot HME but FWIW we did the MB Oval Office Honey Amber recipe using 4 oz of honey malt instead of honey and they have been on the shelf in the beer closet for over a year now.

The honey malt (steeped not mashed) left it very sweet and there is a TOTAL conflict in flavor with the POR.

I've even tried mixing half of a bottle with a plain BMC type beer and it was still pretty um well um aweful. IMHO

Had the POR discussion on some other threads. Seems to come through the most in the Czech Pils and Especially in the NWPA. The NWPA is what you used on the oval office recipe. From getting info from others the Patriots seems to be the best of MR Bs . Hoping for the best with this one though!
