Our next brew day, which will probably be March 16, We are going to do a Wee Heavy. I typically don't like real high alcohol beers but I do love a good Wee Heavy. This is the recipe I have so far. The victory malt is just because I only have 4oz of it and thought I would dump it in there to bump up the maltiness just a tad. I thought about maybe taking a gallon of the first runnings and boiling it down to half a gallon to caramelize it and add color like the original brewers used to do. But then I decided just to be lazy and use caramel malt and black patent The hops are not British but you don't taste the hops in a Scotch ale at all so I don't think that matters. Also this lists a package of 04 but that isn't what I am going to use. I am going to drop the yeast out from under the Avalanche Ale I am doing and dump that into my Wee Heavy. So the yeast count will be much higher than a package provides.
