Lemon-Lime Hef

My wife said today that I should brew up a hef for summer so I think this might be my next recipe:

All Grain
6.25lbs Pale Malt (2 Row)
4lbs White Wheat Malt
1lb Vienna Malt
****Mash 158 for 45 minutes****
0.25 Motueka Hops at 60 Minutes
0.25 Sorachi Ace 20 minutes
0.25 Motueka Hops 20 minutes
0.25 Sorachi Ace 7 Minutes
0.50 Lime Zest 5 Minutes
White Labs Hefeweizen IV Ale Yeast
****Start Vigorous Fermentation****
After Vigorous Fermentation subsides, add 1.75L Simply Limeade
****Ferment for a minimum of 3 weeks****

Extract
7lbs 12.6 Ounces of Wheat Liquid Extract
10.7 Ounces of Pale Liquid Extract
Follow rest of All Grain Recipe

This is NOT my recipe, I came across it on HBT here.

I have a free day (wow!) coming up this Saturday so if I can get to MoreBeer this week I just may give it a try.
The thread on HBT has over 130 pages of people raving about this recipe (including some people that have done mods, etc.).

I'm intrigued enough to maybe make this my next brew.

Sounds great Ron. I think that will keep her happy, well, at least till it's gone.

I agree, HBT is a great place to find recipes.

We'll see if it works out where I can brew or not. I'm hoping this doesn't come out tasting like a Mike's Hard Limeade.

I'm guessing if it did, somebody would have said so already, so that's encouraging.
139 pages of homebrewers can't be wrong, right?

But honestly, all I can think about right now is a pot of boiling mudbugs. Paul sucks.

I did this brew last year. It's actually really good, but I would probably heat the lemonade before adding to the beer into fermentation. After a while, all my bottles were gushers and not because it didn't finish fermenting since I checked for consecutive FG readings (but fortunately, no bottle bombs). It ends up tasting like a sprite berliner weisse.

My son was in town this weekend and really enjoyed them. He got home, went to the gym and came back and asked if we had any left over. That's a big negative!

Ron, I don't think you can go wrong with all the good reps HBT has. That thread started in 2011 so there's 3 years of experience there. Keep us updated.

If this is the refrigerated kind that I think it is I'd be careful with it. Juice out of an unopened container that is shelf stable at room temperature is safe to add if it's never been opened. But the stuff that is refrigerated will ferment on it's own if left in the back of your fridge beyond the expiration date. It's not 'dead jim'. That's probably why there were gushers mentioned above.

While I didn't read all 139 pages, I did read enough of the first, last and some in the middle to see that bottle bombs and gushers hasn't been an issue. Thanks for the thought, though - not a bad idea to be safe.

I picked up everything except the lime and Limeade from MoreBeer today on the way home = yea!

My plan is to brew this on Saturday/Sunday. :banana:

I did the all extract version of this with the simply limeade. it was fantastic! one of my favorite batches. you will surely be pleased with this one if you like hefes.

Sounds Yummy. I read some of the HBT thread too. Hope it turns out good for you. Looks like it could be a real winner.

My only issue (and I posted over there) is that when I run the #'s I get 17 IBUs instead of the targeted 11.9. I'm not sure where to make the adjustment (60-minute versus 20-minute) so I PM'd the recipe/thread owner and asked for his input.

I thought it odd that he only listed weights for his additions and not the associated AAUs.

Since your AAU's are obviously higher than what he had, try inputting the 60 minute addition at .125 ounces in BeerSmith, which is equivalent to 1/8 ounce. Hopefully your scale can do that too. That might be just enough to bring it down closer to his 11.9 IBU mark.

There's no extract in this. Oh, I see - I posted what he did which was give an extract option if you weren't doing AG.

I guess it is that simple. I'm only doing a 3G batch so I've already halved the hop additions. I just didn't expect that much variance in the AAUs. Ill play with it until I get it down to 11.9 or so. I want to brew this exactly as intended to set a baseline. And since it's for SWMBO the bitterness needs to be low.

It just means that some additions could be as low as 0.0625/oz.
