Rushin' Pale Ale

This is an extract beer I made in a hurry because my work schedule was manic, but I still wanted to brew (hence the punny name).

Usually my 2.5 gallon batches are BIAB, and sometimes I actually get kinda creative with the grains, especially if I'm in an experimental mood. But, as I said, I wanted a quick 'n' dirty brew without any drama.

So got 3 pounds of Light DME, and 1/2 pound of 40L. That's it.

Half ounce of Cascade for 60 minutes, 3/4 ounce of Cascade for 20 minutes, half ounce of Cascade for 7 minutes, and a dry hop of 1/4 ounce of Cascade. I think the yeast was S-05. That's kinda been my go-to for these kind of things.

I fermented for three weeks, as usual. Bottled on 6/7. 6% ABV.

This is darn good! Crisp and refreshing, with good but not overpowering bitterness, and a slight sweetness in the finish that just peeks through. A warm amber color, with a good head and decent lacing.

I'll make this again any time. I'll especially made this again when my schedule is hectic and I want a recipe that gives me good beer without a whole lot of effort.

Next time you need a quick brew day and want to do something similar you can shave 45 minutes off your boil and do a 15-minute pale ale. Aside from the 60-minute addition moving to 15-minutes these are very close to being the same darn thing.

I'll be doing this again with some Maris Otter LME I'm picking up from More Beer soon.
