Nervous Nellie

This morning I dumped a batch of beer. First time in a loooooooong time I've done that, but I couldn't think of any circumstances under which I would drink it or offer it to others. The HME was one I've use before with good results and the hops were a mix of Galaxy, Citra, Amarillo, and Simcoe. The wort smelled great. Fermented at 65F with good temp control. I was so disappointed, and baffled why it turned out so badly. The only thing I can think of is the yeast. I used Danstar BRY-97 American West Coast Yeast for the first time.

So OK, tomorrow's a brew day and I'm uncommonly worried that I'll make another stinker. I'm keeping it simple. For a 6-gal batch, I've got:

6.6 lb Munich LME
3.3 lb Golden DME
6 oz of Mosaic hops for additions at 20, 15, 10, 5, 0, and dry hop.
US-05 (Old Faithful)

I have some Magnum but I think it should be bitter enough with the hop bursting, the AA are 11.6%. But I've never used Mosaic before. I tried a coupla brews from the local "weird beer store", as one of my friends refers to it. Both mosaic but completely different in character, so I still don't know. Anybody have first-hand experience with these?

Don't know on the hops alb. But did brew what myself and others thought was an off beer using that yeast too. Solid recipe and great temperature control, beer was just off.

Alb, this is what I have on Mosaic.
I called it a SMaSH originally, but as you can see,
it's not! :p

Anyhow, it's just starting to carbonate and I'm getting tons of orange and tangerine
along with a touch of coconut.
As far as your last brew, I'm not familiar with Galaxy or Simcoe.
Love Citra and Amarillo in combination! In fact, that's a house beer here! :p

What did it taste like?

That yeast ferments like mad once it gets going but its had *huge* lag time for me, like 36-48 hours. Which is nuts, because at the rates I pitch at when I'm brewing American ales with other yeast I use I've got some krausen forming on top in just 3-4 hours quite often.

With that kind of lag time I would suppose if anything else got in there, it would get a chance to get a better foothold then with a yeast that kicks off faster.

I've liked the beers I've made with it, but I've only used it in the winter. In the summer here I think I'd get strong brett beer every time, that stuff is wild in my house and in my air especially in the summer - there isn't anything I can do but hope for the best and try to out compete it if I don't want it. 48 hour lag time isn't going to do that. I don't mind the bit of brett influence from the little bit that gets into my Belgians and Saisons, but I don't really want to notice it in my American ales.

EDIT: I'm not going to tell you not to make an all Mosiac beer, but I will mention that I really didn't find the all Mosiac beer I made to be very interesting. It wasn't bad - but it wasn't anything special. Mosiac seems to compliment other hops better then it stands on its own in my experience. On it's own in my beer it was like watered down Simcoe with a little bit of berry aroma and flavor which didn't do much for me. I like straight up Simcoe more by far. I didn't end up with anything like Teutonic Terror described. But maybe I just got a sucky batch of hops, I dunno.

My mosaic IPA is finally starting to be good but I just dint think I am a fan of all mosaic. When I used them with other hops, I really liked them but maybe time will tell.

What was wrong with the beer you ditched? Waiting 4-6 weeks is hard but may have made some difference.

Mosaic is great for aroma and flavor IMO but not great for bittering. It left an odd grassy flavor in the SMaSH I tried about two weeks ago. I wouldn't hesitate to use it for flavor and aroma (and in conjunction with other hops) but I would avoid it for bittering. I like Magnum or Warrior for a clean bittering addition, personally.

3.0 lb Golden DME (late addition)

1 oz Magnum (30 min)
1 oz Mosaic (20 min)
1 oz Mosaic (15 min)
1 oz Mosaic (10 min)
1 oz Citra (5 min)
1 oz Citra (flameout)
2 oz Citra (dry hop)

What say ye?

Mosaic-Plays Great with Citra!

Looks alot like the AG clone I did of Freshly Squeezed!
Only difference is, I used Nugget for bittering.

You should enjoy this brew alot!

Were you able to test side by side to see how close you were? Freshly Squeezed is a DAMN fine beer.

Nah, flying blind here! :(

Us "right coasters" don't get the benefit of some of the better beer!
The story is, I wanted Amarillo from Yakima Valley Hops. They had none and recommended Mosaic as a sub.
So I looked up Mosaic beers and Freshly Squeezed sounded awesome!
Tried it twice, and I'm sure the originally is light years better than mine, but I was happy with the results!

OK, it's in the fermenter. All went smoothly, and I feel good about it now. Thanks for your help, I'll let you know...
