I forgot about the fan, also I use cheap minute rice to help with moisture, and when the rice gets full of moisture you can throw it in the microwave for a couple of minutes at a time to remove the moisture. The freezers create a lot of moisture along with the fermentation process.

So, I Just ordered it online and it should be here in just a few days - free shipping.
I opted for the Brewmaster version which includes a thermowell already in it so I don't have to modify the lid on this one like I did on the smaller one. I won't be using the LCD thermometer - I verified with them that I can simply remove that and insert my probe.
I have the thermometer and also don't use it but it's pretty cheap.
On my latest brew now fermenting I noticed the blowout tube is dead but opening the unit it's full of yeast love. So, I obviously need to tighten the clamps again. Just in case this happens to you after a few uses, there's a video of how to easily remedy this that can explain it more simply than I can. I also think my lid ring is a bit worn but I bought an extra when I ordered the unit so I'm good.
