1.7 kg can of LME with the 3 Ga fermenter

I bought the 1/2 priced 6 gallon recipe for one evil pilsner and I would like to use my brew demon 3 gallon fermenter to brew half batches of the recipe.

It seems to me that I would not want to fill the fermenter up to the absolute top with water in the final step to allow some head room for the CO2 to escape, but I would be mixing up wart that was a bit 'rich' (high in sugar relative to the recipe) if I filled the fermenter with water up to the 2.8 or 2.9 Gallon mark.

Does anyone have any suggestions for what my final wart level should be in this case? Is having the wart be a bit rich (less water than called for) necessarily be a bad thing? It strikes me that it should be fine, but I figured I'd ask rather than finding out 2 weeks from now.

You should be able to do it as 2.5 gallon batch and it will just be a bit stronger. The IBUs will be higher then if you did it as 3 gallons, but there is more malt to counter them, so it will still be balanced enough.

I've done 3 cans of the old 1.21# premium extracts as a 2.4 gallon batch in LBKs in the past, and this is no different, it should be fine.

I'm planning on brewing the big cans of stout I picked up as 2.5 gallon batches.
