Lame *$# fermentation with S-05

Full pack, 2016 expiration date, 2.5 gallon batch, 1.056...

Been doing a whole lot of nothing for a week. Just putzing along, a few bubbles, bit of foam, blah... I have come to expect vigerous fermentations at the pitch rates I use, but this one is a boooooooring.

I'm sure it's fermenting, I took a sample, nothing tasted hideous or anything, but it's lame. I need fireworks! Pitched some Notty in a batch yesterday and it's way more exciting already.

I used 05 in a blue moon-ish recipe... and even at a low 60f it still managed to produce about an inch of krausen at high krausen. I sampled it at bottling and it was incredibly 'clean' making the orange peel really pronounced. it should age nicely as it conditions. that is one of the things I find fascinating about yeast... every fermentation is unique. I try not to do that 'why cant you be like your older brother?' with the yeast and am pleased with them as long as they make beer for me.

My recent brew with 05 was slow and lasted forever thought in 6 days, it was done. 66 degrees and just pokey and much less volcanic than I remembered it.

I use S-05 quite a bit (Blue Moon, Mackinac Island Red, Bell's Best Brown, Irish Hills Red). Yes, it's less active than Nottingham (White House Honey Porter), or even Windsor (Moosedrool, White House Honey Ale). I use S-04 for Oatmeal Stout. S-05 is probably the quietest, not that I've really monitored that close.
