Here is a simple, yet awesome tasting Hard Cider since u mentioned cider, comes from Yankeedag, one of our esteemed members on here. I have made it several times, it rocks!

NONG Cider (2.25 gallon batch):
5 cans of apple juice concentrate (pure, make sure there are NO preservatives added) (I have also used 2.25 gallons of apple cider, must be fresh with no preservatives)
2 pounds white sugar
1 pound lactose (I found this amount too sweet for me so I backed it down to 4 ounces, depends on how sweet you want it, up to you)
3 tsp pumpkin pie spice
1 pack Champaign or Lavine 1118 sparkling wine yeast (I use which ever one I can get my hands on)

You can drink this after 3 months conditioning, but I like to condition it atleast a year (my preference, 3 months is fine). You can go without the lactose but plan on atleast a year conditioning.

But of course, the Mr Beer (have not tried the Brew Devil version) is also good, but IMHO not as.

Edit: Want to add, I do not bottle or keg carb mine, I prefer it still (no carbonation).
Life is short, live it to it's fullest!
