Podcast: Mitch Steele from Stone talks IPAs

If you haven't listened to this yet, it's very good (IMO).
Brad Smith (BeerSmith fame) speaks with Mitch about his book, the history of IPAs, black IPAs, how he approaches recipes, GoTo Session IPA, Enjoy By, the new Delicious IPA and more.

Two nuggets that stood out for me (although I enjoyed the whole thing):
1) Mitch prefers a grain bill of 95% base malt (like 2-row) and only up to 5% of something like a crystal malt (less than 15 Lovibond)
2) The recipe for Enjoy By did change last year (I knew it!). They are big fans of the New Zealand hops for this beer.

It's about an hour long and it not only killed time on my commute but I really enjoyed it.

I watched the whole thing 2 days ago and really enjoyed it. I think Brad asked lots of good questions.
We also guessed there was a difference in Enjoy By and I think more than once from my tastes. I was also glad to know I think I have a recipe almost ready for my El Dorado hops and think they will be using more of them in future Stone beers.

I will try to remember to watch it.
I'm also interested in simple grain bills. I recently made two, no, three pale ales. One had two row, vienna, munich, C20 and C60. It was quite good. The next had two row and 4oz C120, it was better. The third is Belgian, so gets most of it's flavor from yeast. But it only has pilsner and caramunich. There was an article in BYO a while back extolling the virtue of simple grain bills.

Yes, it's on iTunes. I watched it on youtube but you can get the podcast on Itunes in audio or video.

Semi thread-jack but if you like podcasts, Brewing Network has some good, 'regular beer folk' podcasts I listen to while at the gym. There's one from late December that is about brew disasters and the guys are hillarious.
