I found the "chill haze" one fascinating. My beers have always been really clear. Even my wheat beers. I had no idea it could have anything to do with the boil. I have always done really hard rolling boils since I started using propane burners.

I'm pretty sure I've had beer on the ceiling a couple of times. I can't be sure though due to the ingestion of questionable pharmaceuticals before I opened the beer. :o

This may be why I often get chill haze, especially with my larger batches. I do stove-top, and it just doesn't really roil the wort. Even with the addition of Whirlfloc, I sometimes get cloudy beer, although I have higher hopes with the kegging system. It seems to produce clearer beer, for some reason.

Problem: "Overly high final gravity (FG)"
Cause: "Maybe the beer was supposed to have a high FG"
