Maris Otter extract specs & other stout questions

Does anyone have specs for Maris Otter Extract? I would like to have them to add to BeerSmith 2.2 So I can my recipe together, a Coffee, or Milk Stout. Is there such a thing a Coffee/Milk stout? I am leaning to doing a P.M. Do not whether to use 2-row or 30L Munich for the base. What would be good dark grains & hops to use? What would be the best grain for head retention? Feel like I am in uncharted waters here. Never having done much extract or PM brewing.

I'll just mention that the MoreBeer extract is 100% Maris Otter. Some other Maris Otter extracts are not, so you should check/be sure.
I've used the MoreBeer extract too, and will also vouch for it's quality.

Thanks guys. The El Cheapo self is starting to get the better of me. I have the grains I need excepting the specialty grains. I have been hearing good things about this grain blend
Nocturnal Select Grain Blend
Thinking of:
8 to 10 pounds of 2-row
1.5 to 2 pounds Nocturnal Select Grain Blend
1 pound flaked barely
1.5 to 2 ounces Cluster hops First wort Hop
White Labs WLP013 London Ale -- appropriate sized starter
4 oz Cacao Nibs - Ghana dry spiced for 2 weeks
either single infusion full body/batch sparge or a no sparge
