first experience with mosaic hops

did a saison with only mosaic for bitter/aroma/flavor... cranked the heat up on the fermentation. I was reluctant to try the hop for some time because of some ppl reporting unhappy experiences with it... but.. .I did. wow... I tried some of my trub bottle. the smell is like a tropical fruit salad. the taste ? like pineapple, tangerine, maraschino cherries... very complex and very fruity. the bitter quality is present but not overbearing too.

what an interesting hop!

I want to use some too, but I have plenty of other hops on hand. I have tried a mosaic session IPA. Not crazy about session IPAs, but liked the hops.

I've not used Mosaic yet. But I love your description of it. Might have to give them a whirl soon.

I did a mosaic IPA but wants crazy about it. Tasted a bit like grapes and got better with age,
I like it better with Simcoe and Citra.
In the future I plan to use it mostly in late and dry hop additions.

Straight up it seemed like watered down simcoe with berries on top when I tried it. But I was trying it in an single hopped pale ale to try to get a vibe. I've liked commercial beers where it's mixed in with other hops quite a lot.

But I might like it better straight up in a saison or wheat beer who knows. I like citra better in those types of beers straight up then in pale ales/ipas.
