Next Friday afternoon I plan to brew again.....possibly in 95 degree temps but I'm taking one for the Borg.
I'm making a sort of hybrid using half 001 and 007 yeast. It's mostly an American Amber ale since only some of the yeast and malt are of the English style. The hops are not. It's actually going to be hoppier than a pale (surprised, I think not) but so far, this is what I've come up with. Of course, like all my recipes, it may change before show time.
First time using Azacca and Huell Melon as well as Gleneagle MO (which tastes so good raw) so I'm hoping for a good, tropical nose but think the malts might steal some of the tropical flavors in the taste. It'll be light enough for summer and hoppy enough for Paul. The small amount of Special B is mostly for color and also a bit raisin though I may drop that down to 1/4 oz. Still not sure about the Honey Malt but I have some that's old so??????

I have never tried some of those hops. And I have never heard of Gleneagle.
I am currently drinking Ralph's Wag Your Tale Pale Ale single hopped with Azaaca hops. They have a very nice flavor. Not over bearing at all. I used 4 ounces starting at the 15 minute mark and didn't dry hop or steep. Every now and then a man just has to make an APA.

As for brewing in the heat...A while back I was wandering through Sam's Club when I felt a rather hefty breeze. I looked and a good 20 feet away there was a squirrel cage fan running. I went to take a look at it and it was set on Low. I cranked it to 3 and could not believe the wind it put out. There was a stack of them that said "One time stock $65". I thought this thing would be nice for when I am in my brewery on a hot day. I bought one. Best $65 I ever spent. Not only does it help immensely keeping me cool but blowing it directly on my kettle helps cool the wort. Then I discovered that blowing it on the conical keeps the temperature from rising over 70F in a vigorous fermentation. My Conical is in my basement where the temperature is a constant 66F year round. This fan forces high volumes of that 66 degree air against the conical with forces the heat off the surface as it is produced. I also use that fan in my hallway to blow the cool air from the AC into the living room area. My thermostat is in the hallway when it hits 76 degrees in there it is still 78 to 80 in my living room. This fan evens that out which makes the air conditioning more even and efficient. So it saves me money. When I mop my kitchen floor I blow this thing on it and it is bone dry in 3 to 5 minutes.

I think a good high velocity fan is a great investment for the brewer because you will use it for a lot of other things when you are not brewing.

For my birthday/father's day, my wife bought me one of them there fancy smancy Dyson fans. Quiet as a mouse and it kicks. I've used it twice outdoors and it does help but when it's 95 out, it basically just moves the hot air around. Better than nothing at all. Just feeling the breeze on your sweaty skin makes one feel cooler.

I'm looking forward to these hops because I've not yet read a negative thing about either and that's not normal. I hope they do the tropical thing.

Gleneagle is the same grain as the other Crisp Maris Otter types. But it is floor malted using more "old world" techniques, instead of using modern malting methods. Gleneagle refers to the facility/place. If you like how that has a more robust profile, try some of the floor malted German and Czech malts. They are tasty too.

When I got it at my LHBS, he told me he can't get this often so I grabbed a bit. I tasted it there and it made me think of fresh, homemade bread.

MoreBeer sells it if you want more and can't find it anywhere else. Search for "floor malted".

This one is in the fermenter. What a hot, sweaty brew day this was. Might be the hottest I've ever brewed in....no clouds and just a fan to help move the sweat around.
I ended up with more than 6 1/4 gallons and still got to 1.056 instead of 1.052. I have a tad bit more 001 than 007 yeast and tonite I'll add a blow off because there's not much more room in the Better Bottle for waht will likely happen.
The pump really helped chill the beer faster and I even got it down to 63 with the pump and ice chest. That really surprised me.
Bottom line, this will likely be an amber ale instead of pale ale but do I really care?

Just dry hopped with 3 ozs (1 oz each Azacca, Huel Melon and Simcoe) and I love the color of this beer. It's pretty different for me though I use to use Special B a lot more years ago but small amounts really make a nice color and add just enough flavor to make it nice.
My only concern is that the Honey Malt, though small, and Special B may take away some of the hop character but I thought of this going in and in ain't fun doing 'normal' all the time. Besides, I'm definitely not normal. :bart:

So this has only been in the kegerator 1 day but I wanted to see what I could get out of the yeast blend I did and also, what Azzaca and Heull Melon did. I don't even notice the yeast at this point. It's very clean and surprising.
Nice, semi malt backbone with a slight hoppiness at the end. I really wanted to use 6 oz of dry hops but didn't because I wanted to save some for another brew later. But, I'm hoping once its fully carbed, I'll be able to get more nose on it. I do smell something a bit different that I assume are those hops. I really like what the Marris Otter did to this beer.
It feels good to put a recipe together and have an idea of what you want and have it come out pretty much like expected. I guess I got lucky.

Paul was kind enough to part with one of these for my pleasure.
First let me say the aroma is out of this world. While trying to type on my phone and take a picture I could smell the hop goodness from 3 feet away. :wow: Other than Simcoe, I've not used any of the other hops before. A slight bitterness up front, though that could be carb bite as I feel it's a tad to highly carbed. I'm trying to let it warm a little to see how it changes, but it's such an easy drinker I'm finding it rather hard. This is a well balanced Pale with neither hops or malt over powering the other.
