anyone into this? brining and lacto fermenting stuff? im curious to try and have questions I cant find answers to.

Garlic dill pickles and sauerkraut.
Would do more but don't have a cellar.

if you buy grocery veggies like carrots and cabbage... do you wash them? just rinse them in water? with all the foodborne listeria cases if you washed the vegs in soapy water and rinsed, wouldn't this kill the lacto bacillus normally found on them that makes things ferment?
do you need whey? or just brine?
