Simply Simarello

Getting ready for football season.....I want a beer that is heavier than a pale but not one that will make you feel too full.
I've got a ton of Simcoe and Amarillo so I'm using a bunch of it....like 11.5 oz which is a small IPA for me.
I'm off the first week of September and plan on brewing this mid week. As always, this could change up to brew time. I may reduce the hops a tiny bit. I'm going for a 154 mash to try to grab some sweetness to go along with the hops and feel 156 might be too much......thoughst????

Interesting timing...I am working on my next recipe too. And I was planning on using Simcoe and Amarillo also. Looks like I can quit working on the recipe and just brew yours. Thanks for writing this for me.

I have no problem with anyone using any of my recipes and I'm sure there's been many with similar recipes like this. I usually mash my IPA's at 152 and I think Lagunitas goes to 156-158 and I want something in between but am not sure 154 will be enough.
I may also do another blend of 001/007 but I'll know when I get a better taste of Hippitiy Hoppity and see what that mix did for it.
Finally, my last order of Amarillo came in very low at 7.7% and usually it's above 9.5% where I buy.....not sure what that is as I think that's a pretty big spread or more than I usually see from the same place. YMMV.

I'll probably make a few very minor adjustments to it, but I'll use the base recipe. I'll probably use a little less grain to bring the OG down just a touch. And I'll probably reduce the hops a bit to come in with an IBU in the 60's or so.

I see a beer-swap coming on! Got a nice Australian recipe I'm working on too with Galaxy and NS hops.
With that in mind, I'm off to RedBEERd's to drink a Thunderbird.

FWIW, I mash at 156 for the Levitation clone and it typically finishes around 1.018-1.020. Obviously there are other factors to consider in terms of attenuation but all things being equal with my other beers, this one finishes pretty high. It's perfect for that beer IMO, so use this information as you will.

And I loves me some Simcoe+Amarillo. I don't think I've had a bad beer with that combo.

Looks good Paul. I would just throw that 5 minute Simcoe in at whirlpool with the Amirillo.

Oh, and I'd do 2oz each dry hop at 5 days and then do 1oz each in the keg. :clink:

I personally prefer the dry hop to be added on day 3, scrubs any bad flavors with the fermentation not complete. Remove on day 7.

I've found since cold crashing that 3-4 full days at 68ish then cold crash has worked very well for me though I am always willing to try something different.

I'm off next week and will try to get to this Tuesday or Wednesday but like Ink's idea of saving some of the dry hop for the keg. I'm also thinking of adding about 1/2 lb of rye just because I like it. At that level, it probably wouldn't amount to more than just a slight color change. Only question is, will it even be noticed. My thought is that it should add to the crispness and give it more body.

So basically, you're making a hoppy pale and I'm making an IPA I guess. Interesting adding in the sugar too! I rarely use it in my IPA's but do have a heavy IPA coming up that has 1 lb of sugar in it. I always feel like that's cheating but I know that's simply not the case. It's just another one of my OCD things I guess.

I don't look at adding the sugar as a cheat. I use more to aid in drying it out a touch, which I think lets the hops shine through a little better. I'm going to hold off on keg hopping this one. I'm sure I'll have enough to worry about since this will be the first kegged recipe for me. I like the idea of the rye also. It does make IPA's pretty darn tasty, doesn't it?

As far as mine being a hoppy pale, it's actually in line with an IPA according to the style guidelines. It's on the low end of the color and gravity, but it's there.
