Brew Your Own has some great articles on yeast in the September issue. Washing, pros & cons of pitching on a yeast cake, starters, and of course pitching rates. A nice primer on yeasties in general check it out

I was reading Chris White's essay in that issue over breakfast this morning. Very technical, but I found the diacetyl discussion interesting. Seems to indicate that those who rack to a secondary may want to wait until after day-12, so that there's enough yeast to clean up the diacetyl prior to then. But, I want to research further. Maybe if you rack after 1 week, there's still plenty of active yeast suspended to do the job; I don't know.

I'm not particularly crazy (IMO), and I don't rock-climb. It's just the name of a video game I used to like to play, back in the 80's.

I'm inclined to agree with him...

Now I don't generally rack my beers to a secondary... When I do, it is because of an addition or commando hops or I totally screwed up and transferred too much gunk from the boil.

I have also never had a DMS issue...

Having said that, of all the beers that I do not rack, there is a clear date range that seems to occur at around day 15-16 where the beer gets significantly clearer that it was early on.

This tells me that more yeast is dropping out of suspension around that time...

So, day 12-13 or later sounds about right to me...
