pecans in beer and maris otter

so we are working on our rce and something seasonal is goin to be brewed up for this one and im thinking of doing something like the pecan pie brown ale from emma's brew better beer book
has anyone ever tried using pecans before? ive been doin some research and seen people having luck with toasting them in oven and then putting in a paper bag to soak up oils and then mashing or ill just steep them with specialty grains since i dont wanna do all grain
anyone see issues with this?
also the recipe calls for maris otter and im looking for a way to convert maris otter malt to extract with specialty grains
any ideas on this?
