Cream soda - first attempt

Cream soda - first attempt

Made my first batch of cream soda today, I've never attempted this and didn't find a lot of recipes. But here is my first shot at this.

2.5 gallon recipe

2.5 cups can sugar
1.0 cups brown sugar
7.0 cups water

Bring to boil

Add:
2 oz of vanilla extract (not imitation)
1/8 tsp of cream of tartar

Simmer 15 minutes

Add:
-2 gallons of spring water in keg
-Vanilla syrup mixture from above

Pressure at 30 PSI

It's in the keezer and ready to sample in the next few days. Anyone else out there make any homemade cream soda?

Never done this but am interested. Let us know how it turns out. Does it have to ferment, or just cool, age and serve? Growing up I lived on Red Cream Soda.... might explain the spare tires I carry round... LOL

If you keg, you don't need to ferment, but if you naturally carb, you'd need to add a little yeast and sugar, then stick it the fridge when it's at the level you want. Otherwise, it'll continue fermenting until all the sugar is gone. You won't get much alcohol from this. You may get about. .5% or so.

This did turn out pretty good, and since then I have made a couple of batches of root beer as well. I have a dedicated keg for just soda. Today I plan to make a Jamaican ginger beer with fresh ginger.
