5 lbs Maris Otter
3.5 lbs British 2-row pale
1.6 oz British roasted barley
Hops:
0.82 oz Northern Brewer (60 min)
Yeast:
Edinburgh Scottish Ale (WLP028) with 1 liter starter
Adjuncts:
0.5 tsp Irish moss (15 min)
Water:
3.3 gal
Mash schedule:
20 min @ 102 degrees
30 min @ 152 degrees
60 min @ 154 degrees
10 min @ 175 degrees (mashout)
no sparge
Boil:
60 min
Force carbonated in the keg, bottled then rested x 1 month.
Efficiency about 72%
OG = 1.079
FG = 1.019
ABV = 7.5%
The label has the MacPherson tartan and clan crest. Pronounced MacFURson. “There’s no FEAR in MacPherson,” said an old clansman to my nephew. My maternal great-grandmother was a Clark, and part of the MacPherson clan.
