Fast fermentation

I brewed up the 3.5G batch of Levitation that I was talking about in another thread and pitched the yeast at noon on Sunday.
This morning while working from home I decided to perve at the carboy to see how it was coming along (how thick the krausen was, etc.) and what I found was a quiet airlock and a pretty clear beer.

It seems that my very active and chunky WLP007 made quick work of this wort. OG was only 1.047 and with the high mash temp of 155/156 I generally plan on an FG of 1.018. Yes, this beer is only 3.8% but I love the way it tastes so I've never messed with it.

The beer was so clear in the carboy that I had to take a gravity sample and......it's at 1.018 barely 48 hours later. I fermented at 68 so I've bumped it to 70 to clean up a bit but I'll be drinking this sooner than planned :banana:

I know many here stick to a 2 or 3 week plan for fermenting, but the yeast are gonna do what the yeast are gonna do when the yeast wanna do it. So who am I to question it? I'll give it until Friday to clean up a bit and they dry hop followed by a cold crash but this could be in the keg early next week carbing up.

I forgot to take a pic of the hydro sample, but hopefully this picture shows a bit of what I mean. It has already flocc'd pretty well and produced a pretty clear beer. No layers showing. They just came, got their work done and packed up shop.

My only decision now is whether I stay true to the recipe or toss in some additional hops during the dry hop phase - just because. Oh, such problems to have!

Hahaha, there will definitely be a dry hop and the amount won't change. I'm just trying to determine if I want to change the Amarillo/Simcoe plan with something else to tweak it. But on the other hand. why mess with a good (known) thing?

For reference, I needed about 115B cells and I ended up pitching 214B (assuming the calculators are right).

Many hands make light work I suppose.

007 isn't the most flocculant yeast is it but yours did very well.

Haha. It's an amber that looks really dark in the picture. And I guess I have to drop the icky comments now that I've found two good stouts so far, eh?

Was the 007 Pure Pitch? I just did a stout 3 g batch and pitched full WLP004 Pure Pitch used O2 this was supposed to finish 1.012 5 days in it was at 1.012. I kegged it at two weeks (FG stayed at 1.012) and bottled one in a MB 1 L bottle and carb cap,I did not pick up any off tastes from early kegging (I usually go 2.5-3 weeks) the yeast did its job in quick fashion.

Yes, it was Pure Pitch and I made a starter (out of habit).
The starter wasn't really needed but I had the choice of being slightly under pitch rate without one or significantly over with one so I opted for over. It took off fast and apparently finished fast, too.

After dry hopping and letting it sit for the past week, I'm starting the cold crash today. The sample is a pretty red and nice and clear already.

I'll keg on Friday or Saturday depending on my schedule and depending on the keg I am trying to save it will either get into the kegerator right away or it will have to wait it's turn.

Still looks a bit too dark for you to drink so take it easy. :)
It's that clear BEFORE you cold crashed it? No gelatin? If so, nice!

Yes, that is pre-cold crash, no gelatin. It looked like that 48 hours after I pitched until I dry hopped it, course. Then it settled again.

Chris, that is just cruel. :(

I'm rooting for you Kealia. My two hour brew last week is an Irish Red that I hope will be ready for SuperBowl. It stopped bubbling pretty quickly, maybe because I pitched 11g of yeast into a 3 gallon batch. If I keg it next Thursday, that will be two weeks, then I have 9 days before the Big Game.

Ah, great question. I stuck with the tried-and-true Amarillo/Simcoe that the recipe called for.
