Caribbean Ginger Beer (soda)

First attempt at making this. Here is my recipe for a 5 gallon batch.

Bring one gallon of water to boil.

Add 3 cups white cane sugar and 1 cup brown sugar.

Slice 1 lb of ginger root and add to the pot. Add a couple of cloves. Simmer for 10 minutes.

Fill keg with 4 gallons of cold tap water. Add 2 oz bottle of lemon extract and juice of 3 limes. Using a 5 gallon paint strainer bag in the keg opening, pour ginger root syrup mixture into keg. Tie off paint strainer bag with ginger root pieces and leave in keg.

The sample was pretty good. It should be fully carbed in about a week for a refreshing soda on tap. Or.. Add ice and rum -- dark and stormy cocktail.

Yes... Love ginger ale but too much high-fructose corn syrup... Bad...

Love ginger beer, can't often get it around here...

Please update this with more tasting notes when ready... I'ld like to try making this!

Well I had to pull the bag of ginger pieces after I went back for some samples. After steeping for about 10 hours, it was pretty strong. But it did taste great. Can't wait for it to get carbed, should be a refreshing drink. And yes, John, goslings would be good with it. I like their rum a lot. :)
