Turning a Brew Demon Kit into a saison

Every since I read about a saison using pilsner malt as a base,
I have been thinking about using One Evil Pilsner recipe and some Belgian sugar with Danstar's Belle Saison yeast.
Am I too unreasonable with this?
I live in the south and I keep the house at 78 degrees.
I am looking at a way to keep brewing.

I agree!
Are you in the humid south, or the dry southwest? If it's the southwest, you can always do a swamp cooler--should drop fermentation temps by around 10* or so.
Failing that, Saison and other high-temp friendly yeasts are a great way to keep brewing!

Bella will make a great Saison at that temperature. I've run it up to 85-90 before with great results. If it's a 2.5 gallon batch you can pitch half a pack with no problem. I've had a whole pack chew 6 gallons of 1.060 wort down to 0.998.

I life in Arkansas, so it is quite humid already.
I have used frozen water bottles to keep the temp down when it is not so hot.

Do you have a basement? I keep my thermostat at 77 during the summer, but the basement stays much cooler.

A basement is something that I wish I had.
I would have claimed it for my brewing .
I have a spare air conditioning unit that I
may use to build a fermenting chamber out in
the garage one of these days.
