almost done with wk 3 in primary on a russian imperial stout. estimated og around 1.09
after 3 weeks in primary, on racking to secondary how long would you age it before bottling? 1 mo? 2 ? more? or just bottle it and leave it set in the bottle?
was thinking on racking to secondary and trying to get as little headspace as I can... then use airlock or simply aluminum foil over fermenter top... let sit for a month then rack to bottles with a few grains of yeast to carbonate.
is this sound?
thanks
oh btw the danstar notty banana smell finally went away... fingers crossed it wont taste like it.

As long as you are sure it is @ FG, I would just go ahead and bottle it and let it age in the bottles for a couple months.

Yep, I'm with Steve on this.Dawg LB Steve wrote:As long as you are sure it is @ FG, I would just go ahead and bottle it and let it age in the bottles for a couple months.
Have you taken a gravity reading recently? On a big beer like RIS, it can take a while to get those last few gravity points down. I would probably just leave it in primary until it's done, then bottle.
