Taking off next week and was hoping for fall-ish weather but that's not happening but besides the honey-do's I have, I plan on 2 brew days.
1st one is the Australasia Pale Ale (below-using some leftover malts) then I'm finally going to brew Steve's Bottoms Up Brown. Looking forward to them both.

This is being brewed tomorrow and I didn't get much done today around the house. Tomorrow is brewing and Wednesday I have a funeral and want to brew again Friday so Thursday is the day to get everything done. Who calls that a vacation?
Finally it looks like Fall is coming Friday. 90 degrees on 10/17 is pretty much unreal even down here. My A/C is still running most of the time.
RE: the recipe, I cut the Aromatic down to 8 oz and increased the wheat to 1 lb. Hey, it's beer!

Still boiling as I type this but I had a heck of a time hitting my ph numbers. The mash looked thick and I thought maybe I mis-measured my grain but so far, the numbers seem right. I added lots of salts and should have been at 5.41 and even adding 75ml of lactic acid only got me down to 5.5. My meter measured both RO and faucet water correctly and I always 'tune it up' before using it. 5.5 isn't the end of the world but I may not get the flavors I wanted. Or, it could be the best beer ever!!!!!! (then I woke up)

I hit 1.054 but I was 1/2 gallon over. I was hoping it would not be so damn humid today but fall is coming for the next brewday on Friday.
4 1/2 of hops is all I brewed with but all were double digit alpha acid except the 60 minute addition. They add IBU's pretty fast.

I don't recall having activity as long as this one. I pitched about 1pm and by 10 pm, it had already started showing activity. Here it is 5 days later and it's still very active. While it has slowed down, it's still going at about half the activity. With a good pitch, I usually get 3 days then, silence. This one must be hungry.
