I'm really trying to brew a beer that does not taste like 'Paul's beer' and while I could do a sour or lager (that's coming) I figured I should use what I have in stock.
Got different grains and hops I want to get rid of so I put together an IPA that I am hoping is somewhat of a cross between an English IPA and East Coast IPA with Frankenfrack tastes.
It's a total cloisterfrack and totally Beer-lord/not Beerlord so it should be odd.
I ended up a few points higher and expect lots of blow off and saved a ton of yeast from my huge starter for future beers.

Again, my ph was all over the place. I think I'll have to look at a new ph meter soon.

Have used neither Belma or Calypso so helpless there. The 4oz of 40 and Wheat will just get lost, but like you said you're just cleaning up.

I've used Belma and Calypso in my Coconut IPA's. I like it but for high alpha hops, it seems mellow to me.
But, 15.5oz of hops.....Beer-lord is back! Can't wait for 2017 to buy more hops!!!!!!!

As I posted in the Brewhouse section, this beer came out very well. Ice error aside, its different enough from my standard pale/IPA beers in that it has hops I rarely have used (especially in this variety) and yeast that I've always liked but only use about twice a year. I think the combo is not odd at all but tastefully done. Not bragging just saying that messing around just seemed to work this time.
We'll know more in a week or two.

One week later and color me happy. No bad affects from the frozen fermentation either. I think I like it more because of the 007 yeast. I'm so use to 001 in my pales and IPA's that this gives it just a subtle difference. I like this yeast very much and next week I'm doing 11 gallons of Drop Kick Nate again and splitting them with 001 and 007. Can't wait.

Back to this beer.......I still think I like a little 60 minute bittering addition as compared to not starting any hop drops until 20 minutes. While I enjoy both ways, adding a first wort hopping hit of hops or a small 60 minute hop drop is more to my liking. Actually, a low alpha hop is just fine at 60 minutes and almost any hop will do for me though I do prefer a hop with flavor versus something like Magnum which is just a slight bittering bit.
Anyway, looking back at this recipe I have to laugh because it's definitely leftovers! :idea: And while not a stellar, stand out, the quality is definitely there. I've surprised myself again.
For those still counting (that's you Kealia) here's another time I didn't dis my beer!
