I'm brand new to home brewing. And would like to know how long after sanitizing my equipment should I wait before mixing the recipe? Do I let it air dry? Or should I mix when it is still wet?

Let it air dry.

Depends on the sanitizer you are using, but most are simply dump and brew.

Welome to the Borg!!!! If it is the packet of One Step that usually comes with Mr. Beer kits and the like, it needs aprox. 10-15 minutes contact. If it is Star San acidic sanitizer, then it is an on contact sanitizer. Either way if you seal up the stuff you just sanitized then nothing should affect it.

I do what Steve does, using StarSan or OneStep.
Fill the fermenter or bottles, slosh around, dump it out. Use while still wet.

FYI:

One-Step only needs about 2 minutes of contact really. Probably even less, but the manufacturer says 2 minutes is plenty.

BUT it needs 10 minutes to fully dissolve. That is why they say 10 minutes, to keep people from being dummies and using a solution that isn't strong enough yet.

Easy answer, just throw a TBSP it up in a gallon water jug some hours before you are brewing, and it will be there and ready to go without any fuss.

And yes, use while still wet if it's that.

This is another easy debatable question and a good one, and like a lot of things in brewing no right and wrong way but can be done wrong, and mostly up to personal preference.

I think that is the easiest way to use one step, and correct me Mash if I am taking your answer wrong but, don't need to sit some hours, thinking you mean it can before used anytime when ready. I mostly use starsan but sometimes onestept. I use to fear the foam in starsan but not in a long while.

Yes, it doesn't "need" to sit some hours, but it will last for a good long while, so it doesn't hurt to put the powder in a jug for 2 or 4 or more hours ahead of time if that's the most convenient thing for you to do.

I use StarSan but what about isidor?

IIRC ... shouldn't it sit a'spell and dry?

I think in theory you are supposed to let that dry all the way, but I've heard of people not waiting quite that long and still being OK.

A long time ago when I used that, I always let it dry.

I’m one of those guys that used iodophor and doesn’t let it dry completely. Never have. And I’ve never had any issues.
