I am using my Megapot and gas burner for blanching and then the wife cuts it

We used to do that same thing. I would blanch in the turkey fryer set up, my wife would cut the corn off the cob and put in ziplock freezer bags. Fresh corn all winter long. MMMMmmmm!!

We vacuum seal and put in the freezer, it is a enjoyable time I can spend with SWMBO and I can drink beer while we are doing it. And the corn is so good in the winter months.

We may do Roma tomatoes tonight or honey pepper mustard, depends what the wife want to do when she gets home from work. I also do the tomatoes in the pot for a very short time and then they peal better.

Planted our garden this year after a few years without it. Dozen tomato plants, jalapenos, peppers, squash. Going back and forth to cottage every 10 - 14 days. Came home to find that deer jumped fence and ate every tomato and decimated the plants beyond repair. Wife had said "we don't need to put up the 3 foot extension on top of the 5 foot fence... We then put it up, and they found a way in anyway, because it's now learned behavior. Rats on long legs.

The deer hit my sweet kinda hard this year too. I use to grow fresh market corn and sell at our farm stand, about 6 acres of it. I quit a few years ago but still have all of the equipment and put in a 1/2 acre for us, family and friends. Maybe went a little overboard but still have plenty. I might be able to put a couple of them deer in the freezer this fall and get some of my money back. Deer don't like potatoes and if you plant them around the perimeter of the garden they might not come in as much.

When I was younger and before I had a kid, I had a nice garden. I love fresh creole tomatoes (the best anywhere), long italian beans, fresh bell pepper (green pepper to you lot), and other seasonal stuff. Now I grow a few tomatoes in pots each spring but this year racoons stole our tomatoes and strawberries from our backyard. Stripped bastards!

We did 2 batches so far of our pepper honey mustard. It is not killer hot, we use Hungarian wax peppers and a lot of honey. Very sweet at first then the hot bite at the end and you have to eat more. We have been making this for over 20 years and had our own honey when we started it, but don’t have bees now and buy the honey. We give a lot of it away for gifts. We will probably do do at least 2 more batches this year. It’s one of them things you can’t quit eating once you start.

Wife will clean up them lids and jars that was left after the canning process to make them look pretty, like I do with beer bottles. It is a very simple recipe if anybody wants it. You just have to know how to can and seal after unless you just want to make a small batch und use it up and not keep it for a year or so.
