First time brew-Brewdemon Dopplebock Black Bishop Questions

I received a Brewdemon Kit for Christmas and followed the directions to a T. It came with Black Bishop Dopllebock. The kit instructions says the total fermentation time is only 7 days, however I have read on many home brew sites that a Dopplebock should be brewed much longer that many other beers. It has been fermenting for ten days. If I draw some out it is very cloudy, tastes pretty good (although a little licoricey), should I allow it to ferment longer? Or should I go ahead and bottle?

Hello and welcome to The Borg. A true Doppelbock is usually brewed with lager yeast and at lower temps and longer fermenting time, that said most likely your kit came with a ale yeast and nothing wrong with that. Yes you should go longer then 7 days, let it go close to 3 weeks in the fermenter and after bottling another 4. I know that sounds like a long time to wait, but will be better. Let us know how it comes out. Yes there are faster ways to get from brewday to in the glass, but takes time to get there and having the patience will get you better beer.

Welcome to the Borg, great group of brewers here all willing to help out. Kits like BrewDemon and Mr Beer are great get your feet wet kits, but are a bit misleading in saying you can drink beer you made in 2 weeks. While you very well could, it would not be that good, general rule of thumb just starting out let it ferment 3 weeks, then bottle condition at room temp for 4 weeks, refrigerate what you want to drink at least 24 hours for the CO2 to reabsorb into the beer. As you get more comfortable with the process you can probably knock a week off the time frame. Patience is the key to this hobby!

Everyone gave you good advice. I'll just add that the licoricey flavor you are getting is just from the recipe your brewing, it's not due to anything that has gone "wrong".

What everyone else said... patience, process, and cleanliness will be your friends. Remember that your first batch will be far from the best batch you will ever make, but it will be your beer (which is kinda cool).
