Dunkel Recipe Anyone?

Post by BlackDuck »

Hello all...I'm thinking about a traditional German style dark lager for the winter. Maybe a dunkel...anyone have a good recipe they would like to share? I'm also open to other dark lager recipes too.

It does look like your typical, run of the mill Dunkel. The guys in the video I watched said to not go crazy on the Melanoidin but 4 oz doesn't seem to be all that much. Vienna is the king of the Dunkel. Well, the yeast too but I'm not sure what yeast they used in their beer. I know they said they've done it many times and everyone liked it.

Ya, yes I did. I use lots of Munich and had that on my brain.

Here's a link to my Dunkelweizen recipe and a few notes.

I'll get the BSMX file, too.

Do you want a Munich Dunkel or a Dunkelweizen?

They use different yeasts and base malt combinations and end up totally different because of it.

I'm heading towards the Munich Dunkel.

Here's the recipe I think I'm leaning towards: Beer and Brewing Dunkel. The problem is finding the Munich at a 15L. I can get 10 and 20L at my local stores. Gonna have to see if I can find the 15L.

I wouldn't stress about it, it will likely be just as good with just 10L or a mix 10 & 20.

I was thinking a little mix of the 10 and 20. Maybe 75% of the 10 and 25% of the 20.
