It's Mardi Gras time and that means 2 days off on the 24th and 25th. So, 2 beer days (23rd and 24th). Gonna do a big , bad ass DIPA. They say you should keep it simple. I ain't doing that! I'm keeping it a bit complicated. so I'm gonna make use 3 hops that I've never used before. Hey, it's only beer so I'll drink it.
Then, the next day, it's time for my twice a year, Men in Black IPA. Hey, they're begging for it over here so I have to deliver.

I've used the Strata. They are super dank/dopey. I like that.

Others, no clue.

Finally got around to brewing this today and I've gotten curious. First, my mill was set too tight and I crushed a bit fine but no worries, BIAB saves the day. But, I was looking for 1.070 and ended up with 1.063....much less efficient than normal. All during the whirlpool my refrac was reading 1.072. I get it was hot but as it cooled, it was still higher than 1.063. Why so low?
I've had problems in the past with BIAB getting above 1.075 but never had a problem getting above 1.065. Can't figure it out. So, my DIPA is gonna be an IPA. I hope it's not too bitter (did I say that out loud).

Do you pre-adjust your water to target the mash ph you are looking for so it hits it right away, based on grain bill + water volume?

This is what makes a huge difference in efficiency for me more then anything. With BIAB it just seems to take much longer for the grains themselves to self buffer the water PH, so the pre-adjustment makes everything just get ripping quicker.

Why yes I do and I've been pretty accurate so far. But I've also been either dead on with my OG or slightly above......rarely am I below. Not a huge deal, but I'm nerdily, OCDly curious.
I mash in, don't recirculate for about 15 minutes then start recirculation for about 5 minutes then check ph.

If you are saying you have the proper OG readings at first (at whirlpool with temperature adjustment?) but end up with a lower then expected OG after it cools to a specific and (nearly) identical temperature, and the way you are measuring your OG is the same both BIAB and normal mash style... then I don't have a clue how you could end up with a different OG at that point, unless you ended up with different post boil volumes somehow.

Are you measuring mash gravity (post sparge pre-boil volume, vs. biab post drain, pre-boil volume)? If so are they the same?

That's exactly what I'm saying.
Are you measuring mash gravity (post sparge pre-boil volume, vs. biab post drain, pre-boil volume)? If so are they the same?
I only usually take a reading after I pull the bag and I'm normally very close to the predicted, pre-boil gravity.

That really doesn't make any sense if your post boil volume is the same, unless somehow your final measurements water volume really isn't what it seems to be, IE for some reason there is a difference in thermal expansion that throws things off, but that doesn't make any sense either unless the water makeup is very different, IE somehow one still has a huge amount of dissolved oxygen, and the other doesn't...

Or something else weird like that.

The only advice I can truly offer, is to wear sunscreen.

Did you check at the end with a hydrometer? If so, maybe it is off?
If it was all refractometer..... well, disregard.

Yes, both the refractometer and hydrometer had the same reading.

I kegged this Friday and took a sip today (carbing at higher pressure). It's very good now. It ended up just a bit less than a true DIPA but it's a DIPA. Finished at 7.3%. Tastes and feels like it. Not huge but big and bold enough and balanced enough to fit the bill.
The Strata (so far) is not as prevalent as I thought it would be and it's got very good bittering notes to it. I think this one is a winner!
