Boneless skinless chicken breasts sliced in the center, halfed stuffed jalapeño put in with bacon on both sides and on top. Also doing a small loin and a rack of ribs. On wood and charcoal.

berryman, your "something different" chicken breasts made me look up cordon bleu on YouTube.
I would think spreading cream cheese on the pounded butterflied chicken breasts then adding cooked bacon and cooked peppers (jalapeno or ancho seems good) as seemed best (halved, quartered, sliced, diced) then rolling them up.
Bread crumbs with thinly diced peppers (jalapeno or serano), a sprinkle of the seeds if heat is desired, and thinly diced bacon.
Pretty much following the YouTube recipe.
I see sauce is sometimes included. Queso?

It was so good, my wife had a side salad, new potatoes and cowboy candy jalapeños. I don’t think I need to eat again for a week.
I always cook extra for my mother-in-law and my old neighbor and my daughter, son-in-law and grandson. I used this for the rub and sauce.

TY BD either I got lucky or just getting better on smoking meat, but the best I have cooked ever. I always say that anyways after a cook or a batch of beer.

1st try at Jalapeno Popper Chicken (cordon bleu style).
Roasted jalapeno and some large pepper similar to poblano. Removed skins, seeds, veins. Cooked bacon 80%+ (short of crispy).
Cut chicken breasts in half and pounded them flat. Salt and pepper.
Spread cream cheese on chicken breasts. Lay on a couple strips of bacon. Alternate strips of jalapeno and the large pepper. Roll the chicken and etc.
Roll chicken in flour, roll chicken in seasoned egg, roll chicken in bread crumbs. Cook chicken on medium heat on stove to brown both sides.
Bake in oven at 425 15 min 1st side, then 10 min 2nd side.
Spicey enough to bring a sweat around my eyes but not enough to need milk.
Could have used more cream cheese.
EDIT: Just realized I forgot to drizzel on the queso, Next time.
