Beef La Vinaigre

I saw a recipe on Townsends I may try with a twist. Posting it here to see if any comments have further ideas.
The thing I will change is that I will sous vide a tri tip with the wine and spices rather than stewing/boiling.
I am thinking it would work well with some potatos and onion for a sweet and sour thing. (Edit: maybe a potato hash or potato pancake with onions and peppers?)
