I just started my first batch today in my Brewdemon 3 gallon set up. I also purchased a 2.5 gallon CO2 charged mini keg I will be using to quick carbonate and store in a mini fridge for dispensing.

Two questions. How long should I keep the beer in the fermenter before transferring it to my mini keg? Also, how long can I store the finished product in my mini keg in the refrigerator?

We would usually suggest that you should leave it in your fermenter for 2 full weeks.

Honestly this depends on the beer style. Really hoppy beers like IPAs will lose some hop flavor and aroma, and are likely best if you were to consume in a month or so. Not that they will necessarily go "bad" after that, just that they lose a good bit of that flavor/aroma.

More malty beers are good for a long time, especially really strong ones. Years even for some styles. But those are probably better to bottle instead of using up a keg.
