Made a spicy layered casserole with chorizo flavored refried beans, diced tomatoes, black beans, jalapenos, leftover grilled chicken leg quarters, mexican cheese blend, corn tortillas (think mexican lasagna), salsa, and spices.

This paired very well with this brew:

1.87# CAL
.5# extra light DME
2 oz honey
.25 oz Centennial @ 20 min
.25 oz Centennial @5 min

A bit light on the IBU's but a big punch of citrus flavor that went really well with my spicy casserole and cut the heat.

Made a 9x13 of it. Just spicy enough to be delicious, but too spicy to eat too much.

So the SWMBO and I will get at least a few more meals out of this.

Sounds like a winner. I love it when a beer pairs perfectly with a meal. From spicy casseroles to dessert, there's a beer that complements a certain food. You gotta love the versatility of this magic elixir!
