How to Steep Oats and NOT make oatmeal?

Steeping Oat Flakes. How?
Ok this weekend I made the RCE that BeerRust and I worked out. Well I thought I'd be a smarty, and since I was going to steep the oats, I'd throw in some amylase enzyme and let it sit for a bit and do a mash. I used 1 lb of oat flakes, and about 1.5 qt of water, got it to temp (160), added the enzyme and then mixed in the oats, put it in my syrofoam cooler, wrapped it in a blanket, and let it sit for an hour while I watched the Red Zone and got everything else ready. Well, when I got ready to drain off the juice I opened my pot, and I had made a big batch of oatmeal. ??? It was like a paste. So I added some more hot water got it a bit juicy and pressed that juice, like a milky white substance, out and then boiled that. Well you can't really boil that pasty thick milky liquid with out burning the bottom of the pot black (a whole nuther story), but I managed to get it out without the burnt part on the bottom of the pan. I then added it to some cold water in the LBK, and then boiled another quart adding MB ST Patrick Stout, cinnamon, vanilla beans, lactose and a pack of MB smooth LME at flame out. Got it all cooled down and pitched and now I wait.
My question is, How do you steep/mash oats and NOT make oatmeal? I probably could have added some 6-row or crystal or honey malt to keep it from pasting up. Is that what is normally done?

Well the entire recipe that I was trying to make is:
Oatmeal Cookie Stout
MB St Pat Stout HME
1 lb quick cooking oatmeal (I used oat flakes, but I think they are the same - sure looked the same)
1 MB smooth lme pack
1/2 lb lactose
1 cup honey
1/8 cup cinnamon (6 tsp)
2-3 vanilla beans
steep the oatmeal in 4 cups water for 20+ minutes at 150-155 F ( I added amylase enzyme and let it sit for an hour) <== EDIT: NOT A GOOD IDEA!
boil oatmeal steep water with lactose
at flame out, add HME, smooth LME pack, honey, cinnamon, vanilla beans
pour one gallon of cold water into the LBK
Add the hot wort and top off to 8.5 qts.
take SG, put it back in the LBK and wait.
The OG was 1.064
Big question is how to steep oats and NOT make oatmeal. like oatmeal you'd have for breakfast.

I think you should have stuck with the 20 minutes. It was probably the letting it sit for an hour that did you in.

That recipe looks tasty! Gonna have to stick that in the lineup...
I just steeped oats for the first time Saturday. I did 2 cups in a hopsack. Steeped them for 20 minutes, pulled the sack out, let it drain a few minutes and tossed it in the trash. Was left with the milky white liquid with no oats...

well I did eventually get some nice juicy stuff, so maybe not a total loss. I'll put that in the Duhh.. file for next time. As soon as I pulled the lid, I was like, well you idiot of course you got oatmeal. Now what do you do? LOL

Thanks. BeerRust had the idea of trying for an oatmeal cookie, and we went with that. So we added some sweet with the lactose, and then cinnamon and vanilla. Its kind of a combo of a milk and an oatmeal stout. Can't wait to try it. At least I know I was supposed to get that milky white juice stuff now.

I found something called Golden Naked Oats at my LHBS that is in the form of a Cara type, milled grain. It is supposed to give the silky mouth feel and head retention but doesn't turn into oatmeal.
The batch is still fermenting so I won't have final results for a while.

OK I bottled this last night after a day in the frig to cold crash it. The final gravity was 1.022 (by hydrometer) so only about 5.5 ABV, however the sample tasted really good, with a hint of coconut? I don't know what that is all about, but it actually tasted a little like an oatmeal cookie. Nice and black and clear. I will report back in a month or so on how it turned out.
This recipe may wind up as a standard of mine.

Got a chance over the Thanksgiving Holiday to give this a try. I think it turned out great. Our goal was a nice smooth stout and this hit the nail on the head.

Very Nice! I still haven't put this in my line up yet. I am glad it worked. I probably be making an order and trip to the LHBS this week to get the ingredients for it.

It's in the LBK. The wort smelled great. I can't wait to see how this one turns out!
