Over-chilled Wort

I made a 1 gallon batch today, my smallest ever. And I only boiled half, topping off with tapwater. Then I put a coldpack in it, and put the pot in an ice bath. to my surprise, it pretty quickly cooled to 60'. Unfazed, I pitched the yeast, I'm letting warm to room temperature naturally.

That's definitely not too cold. There are strains of ale yeast that do very well in the low 60s. No worries.

That will work out just fine. There's no harm in pitching cold and letting it warm up. In fact, between pitching too cold or pitching too warm, pitching too cold is preferable.

And as Dave said, 60 isn't really too cold. It's generally at the bottom of the "just right" range.

I always pitch my yeast at 60F I am convinced it is an extremely healthy temperature to pitch any ale yeast.
