Re: One month...gotta do it.
my goal was once a month, but I got nice and poor all of a sudden so I went two or three months without brewing, almost out of beer now and won't have much from this batch either (splitting it with friends) oh well!

Re: Persephone's Tears (Blackberry Wheat)
You don't need one no, but to get the bitterness I wanted without a ton of hop flavor the 60 minute boil was what I wanted, around 15 ibus to balance out some of the sweetness but I still want it sweeter

Re: Persephone's Tears (Blackberry Wheat)
came in a little lighter than planned at about 1.050 which should be fine, leaning on lower ABV than higher for this one, don't want too much alcohol taste

Re: Boil time
I did a hop burst pale ale like that and it worked perfectly! No need to boil it for the full hour if you don't have to

Re: Fruit wheat beers
yeah I know, I looked for the blackberries everywhere and couldn't find them. The only thing I could find was an 8 pack of 15oz cans for $35. No where can I find single cans of it! Oh well! their can of cherries thats the same size as this one is over $40 so I will take what I can get lol.

I am purchasing the blackberry puree here: http://www.northernbrewer.com/shop/oregon-blackberry-puree.html It is 3.1 pounds of puree so 22 bucks isn't too bad this will boost the beer almost half a % ABV if it all ferments out properly. Sinc...

Re: Fruit wheat beers
decided to go with blackberry puree and flavoring to taste, gonna toss the puree into a secondary fermenter for a week or two and then use the flavoring to taste at bottling

Re: In the market for a new thermometer
i'm lame and use a $3 candy and deep fry thermometer from walmart for steeping and chilling, and I have a stick on thermometer for my fermenter that's accurate to 2 degrees which is good enough for me! Call me cheap!

Re: Fruit wheat beers
This is a blackberry extract, Brewers best is the brand and it has good reviews, people don't recommend using the whole bottle though it seems to lend a chemical taste so I figure the actual fruit and part of a bottle of the extract to taste, I will watch out though thanks

Re: Fruit wheat beers
Thinking of doing both BlackBerry puree in secondary for a week or so and then adding flavoring to taste when bottling to get the best of both worlds! Got a solid wheat beer base at about 15 ibu for the recipe and we should be all set!

Re: Charon's Oar
Thanks guys, loving this one, at least as much as my Pale Ale, it keeps getting better with age too, at about 6 weeks since bottling and its starting to blend really well!
