Did you ask Mr Bell why he is fighting Innovation Brewing Company? Bell's catch phrase is bottling innovation since 1985, or something like that. Can't confuse a craft beer drinker! Wouldn't support Bell's in any way until they drop the lawsuit they have filed.

I am almost in the same boat, due to marital issues and having an unwanted house guest (brother-in-law) I haven't brewed at my house, which is on the market due to the impending divorce, in at least a year. I have brewed with friends and all, but it is nice to just relax and brew a batch at your own...

I have been using the Wyeast Sweet Mead yeast the couple of year's. I haven't been into a homeBrew store in almost a year. I do have a couple Mangrove Jack Cider kits that have a cider yeast in thrm, but I have yet to be able to use it. Sounds like you are going to be the guinea pig.

The key, in my opinion, with El Dorado is having some Munich in the recipe. El Dorado is a very nice and popular hop for commercial breweries right now. I like it but it needs a nice malt backbone to help not make it cloyingly sweet.

Sounds tasty. Looking forward to how this cider develops. I traditionally have gone the Graff route and I enjoy that quite a lot. I have done the HBC cider and it was pretty good after a year of conditioning.

I personally prefer the dry hop to be added on day 3, scrubs any bad flavors with the fermentation not complete. Remove on day 7.
